Olive oil production commences with harvesting the olives from the tree and placing them in a collection vat. The leaves are then removed from the olive and washed with water.
The olive paste is later sent to an olive mill for crushing to get an olive paste. It is then transferred into a malaxer with a temperature of less than 27°c and again into a centrifugal press for pressing (extraction) to release virgin oil. The pressed paste produces pomace that can be used by refining factories.
